Side Work



Do you have your Culinary Arts Students do SIDE WORK?

I do. EVERY MONDAY AND THURSDAY

Upper level students need to take responsibility for their lab.

It should take a group of 16-18 students no longer than 15 min to run through the lab and get it in working order.

Here is an example of my Monday and Thursday side work list.

Culinary 3 Monday Side Work List (Master)
Wipe off all prep tables with sanitizer top and bottom.
Remove out of date items from the refrigerator
Organize (remove any out of date or damaged product) and Sweep the Pantry
Wash and put away any dishes left from Friday
Review inventory and look for any staple item that needs to be purchased
Laundry (Wash, Dry and Put Away)
Spot Sweep the Kitchen
Sanitize prep sink and kitchen sink

Monday Side Work (Extra)
Find all the parts to the stand mixers and saran wrap the bowls.


CULINARY AND FOODS TEACHERS WE CANNOT DO IT ALL. LET YOUR STUDENTS LEARN TO TAKE PRIDE IN YOUR CLASSROOM KITCHEN. 

MAKE SIDE WORK A PART OF YOUR CLASSROOM MANAGEMENT AND IT WILL MAKE YOUR LIFE LESS STRESSFUL!!!!!

First Day of School!!!!

I am so excited to begin school tomorrow!!!!!!!! I decided to have this showing as students walked in the door to get them excited for what they will be able to accomplish this semester :) Lets look back at last year: I have been planning most of the day today trying to get my lessons planned for the nine weeks. I like to start the year with an idea of where I want to go, however;  the most important day of school is the first. It sets the mood for the entire school year. Kneading!!!

Kneading Techniques “Working the Dough” Kneading is one of the most known terms in baking, but do you really understand its importance.  Could you recognize if you have a well kneaded product? Do you know the different kneading techniques? Do you know how to test if you have kneaded well enough? When I set out to create my lesson plans over baking, I could answer a few of those questions listed above.
