Grains are SEEDS. They are packets of nutrients and energy for the plant.....and us!
There are two types of grains:
- True Cereal Grains- are the seeds that come from grasses such as wheat, millet, rice, barley, oats, rye, triticale, sorghum, and maize (corn).
- Pseudo-Cereal Grains -are seeds from shrubs or bushy plants, not grasses.
1. The BRAN, the seed's outer fiber packed outer skin
2. The GERM, the seeds reproductive part. It is the seeds embryo. It is the core of the seed that has the capability of sprouting a new plant. The germ is super rich in nutrients! It contains antioxidants, B vitamins, vitamin E, the minerals zinc and magnesium, some protein and fat.
3. The Endosperm is the germs food supply! It is full of starchy goodness! That supplies the germ with nutrients.
SOME GRAINS ARE NAKED!!!!
NAKED GRAINS ARE 100% EDIBLE. Meaning they do not need any type of preparation to be eaten. An example of a naked grain is CORN.
What makes something WHOLE GRAIN??????
For a product to be labeled Whole Grain it must contain 100% of the grains bran, germ and endosperm. These have to be sill present in the same proportion when the grain was growing in the fields.

WHOLE GRAIN VS. Refined /Enriched GRAINS
1. WHOLE GRAINS- All the seeds nutrients remain intact. They are a better source of fiber and nutrients. They are eaten as a single food such as brown rice or oatmeal, or as an ingredient in a product lie whole grain bread or whole grain pasta. Whole grains keep you fuller longer!
2. REFINED GRAINS- These types of grains go through a process called milling. This process strips out both the bran and germ to give them a finer texture and longer shelf life. Refined grains include white flour and white rice. Not long after consuming refined grains you can find yourself hungry again. These types of grains do not help regulate your blood sugar. Lots of products are made with refined grains such as breads, cereals, desserts, and pastries.
3. ENRICHED GRAINS- Many of the nutrients that are lost during the milling process are added back in later.
